Although Métronome was inspired by the success of Montparnasse Bistro NYC opened in 2000, it will have an identity of its own and will be more a Brasserie like the ones that are found in Paris and now all around the US. The décor and cuisine will be updated with more contemporary touches to better fit the local Florida market. The décor will include warm wood paneling, brass railings, original vintage French posters, mosaic tiles and wood floors, red booth and banquettes with brass studs, exposed wood tables, belt driven ceiling fans and custom light fixtures. The restaurant will have several distinctive areas, the main entrance will include a Café/Lounge and a long Mahogany Bar with a Zinc bar edge imported from France. The Main Dining Room will have exposure on two sides with windows overlooking the garden surrounding the complex. A Raw Bar an important component in any Brasserie will be featured in the Main Dining Room displaying fresh seafood and will also double as a Tapas Bar. A private dining room will be available in the wine cellar room surrounded by a separate wine storage cellar with seating for 20. There is also outdoor dining offered in the front garden which will have a second bar with a large circular shape. The total seating capacity will be app 260 seats for the entire restaurant including dining, private dining, bars and lounge.
The menu will be very similar to Montparnasse, a combination of contemporary and traditional French cuisine; of course the pricing structure will be adjusted accordingly to the market. Métronome will also feature a Bar & Café/Lounge menu which includes world inspired Tapas prepared “French Style” (small appetizer portions) designed for grazing with a glass of wine or perfect for sharing with friends with a cold beer. The Raw Bar will offer a large selection of oysters and clams and will also include seafood platters “Plateaux de Fruits de Mer” on one, two and three tiers. The menu will also have a section of classic dishes available for each day of the week and as Montparnasse all of the desserts will be made in house including ice creams & sorbets.
The beverage program will be a very important component; it will feature a large variety of French, Belgium & American Beers available both on draught & bottle. The wine list will also be extensive at approximately 200 selections, displayed in the glass enclosed wine cellar. Métronome will have “Le Verre de Vin” sealing system, allowing an extensive selection of Wines & Champagnes by the glass without compromising the quality. Over 30 different selections will be available with a variety of choices at different price levels from light to full bodied wines. In addition this Brasserie will feature a world class collection of Bourbons & Scotches both blended & single malts. There is also an extensive after dinner drinks selection that includes Cognacs, Armagnacs, Eau de Vie & Ports.
